Well, I had great intentions of taking pictures. But we were hungry, and when the toddlers are yelling and tummies are rumbling, I want to just serve and enjoy! I’ll be making this again, this month though, so I’ll update with a picture!
4 c spinach, chopped
1 dozen eggs, scrambled
1 pound ground beef, cooked
1/2 medium purple onion, diced
1-3 garlic cloves, minced
1-2 tablespoons coconut oil, or butter
1 tablespoon rosemary
Salt and pepper to taste
1 c grated cheese, like sharp chedder (optional)
Put oil/butter into skillet, and allow to melt. Add in onions, and cook until almost translucent. Add beef and cook through.
While beef is cooking, chop spinach and set aside.
Whisk eggs with spices of choice, until thoroughly beaten.
Grease 9×9 dish with oil or butter, place spinach on bottom, pour eggs over top, add beef when cooked.
Cover with foil, and bake at 350 degrees, for 30-45 minutes.
If adding cheese, removed dish from oven and add cheese when there’s 10 minutes left. Replace dish into oven, without foil covering.
